Chef Traci Higgins was highlighted in the "Launch" section, which profiles successful entrepreneurs. MY INITIAL INSPIRATION : "Moving to san Francisco for my husband's job, I contemplated what to do with my career. I'd spent 7 years in the restaurant industry and after culinary school I did not want to go make to those hours. But I liked cooking and working with people, so I decided to be a personal chef." MY CHALLENGE: " I hit a wall. Within six months I had 20 clients and going to three houses a day. For each one I'd go shopping, then cook - sometimes the same dish I'd be up at 6a.m. and home at 8 p.m. I couldn't take take on more clients. I was making $50,000, but I knew there had to be a way I could earn more." BREAKTHROUGH MOMENT: "I was always driving, so I had lots of time to think. One day it came to me: I could cut down on work time ad take on more customers if I did the cooking in a central location, made just a few entrees en massse and delivered them." HOW IT CHANGED MY BUSINESS: "I rented a 600 square foot kitchen for $600 a month and gave myself six months to make this work. I described my business as an organic meal delivery service and found more clients via nutritionists and trainers. It took off, and soon I had to hire a staff. By 2007, I was bringing in $700,000. But I am still looking to grow. I'm now opening a retail store selling healthy take-out food. I'd like to turn it into a franchise." ADVICE TO OTHERS: "Why limit yourself? If your business is working, expand it. Always think about how to reach more people." -by Josh Hyatt

CBS' Eye on the Bay aired in 2006 - They took a tour of the kitchen and interviewed Traci about the service, our commitment to healthy food and the special one-one service offered to each client. The espisode was so popular that is was aired two more times!

Chefs cater to harried dieters. Sticking to a Weight Watchers, low-carbohydrate or other kind of diet plan usually means choosing between unappealing packaged foods or cooking your own meals while keeping track of various points of this and grams of that. But, personal chefs -- who deliver a week's worth of freshly made dinners to time-starved clients -- are aiming to change that by offering customized low- carb and low-calorie meals. Welcome to an era of diet fads Aplenty. But do they work? We want to be told what to eat so much that we're even willing to eliminate entire food groups. Then there's the 41-year-old Weight Watcher's plan, which allows dieters to eat what they want as long as they don't surpass the days allotted "point" quota (each food has a certain number of points). "My clients on Weight Watchers have the most success because of the variety," says Traci Higgins, owner of Dining In, a local personal-chef service that caters to clients' dietary needs "When you begin to cut things out, it starts a mental process of deprivation. Psychologically, we focus on what we can't have rather than what we can." By Marin Preske
